Ingredients

Ingredients for the muffins

2 3/4 cups of all-purpose flour
2 teaspoons of baking powder
1 teaspoon of salt
1/2 teaspoon of baking soda
1/3 cup chilled of shortening
1/2 cup of buttermilk
2 mashed bananas

Ingredients for Rolling

1/2 cup (1 stick) of melted butter
1 cup of granulated sugar
1 1/4 teaspoon of ground cinnamon

Ingredients for Vanilla Glaze

1 cup powdered of sugar
2 tablespoons of milk
1/2 teaspoon of vanilla extract
In some cases, chopped pecans are also used.

Procedure

Initial preparation

Preheat the oven to about 400?. Spray a muffin pan of your desired cup number with cooking spray. For this recipe, a 12-cup muffin pan will do. In a bowl, mix the flour, salt, baking powder and baking soda and stir. Using a fork or pastry cutter, cut in chilled shortening till the mixture looks like a coarse meal. Add milk and the mashed bananas as you stir with fork until the dough is ready.

Kneading the dough

Put the dough on a suitable surface for kneading and knead for about 7-9 times as you continue adding flour until the dough is non-sticky. Once the dough is completely ready, cut and roll it into small balls, preferably the size of a teaspoon. Meanwhile, put cinnamon and granulated sugar in a small bowl and stir. Melt the cup of butter in a separate cup. Now, roll the teaspoon-sized dough balls in the just melted butter. Roll them also in the cinnamon sugar. Place 4-5 dough balls in each of the muffin cups in the pan.

Baking

Now that you have your balls in place, you need to bake them for about 15-25 minutes, being careful to avoid over-baking. If you want to know whether you have baked for the right time, insert a toothpick through the center of the muffin. IF it comes out clean, then now you can stop baking. Remove the muffins from the oven and allow them to cool for about 10 minutes. Now, remove the muffins from the pan and allow them to cool completely before icing is done.

Icing

Banana Monkey Bread Muffins are not complete without icing. Once they cool down after baking, it is important to apply icing on them. This is done by whisking together powdered sugar, vanilla and milk, then drizzling the mixture over the muffins using a fork. Once everything is ready, you can now serve your muffins, preferably when they are still a little bit warm.
In a nutshell, the preparation of Banana Monkey Bread Muffins is a walk in the park especially for an experienced chef. Normally, it takes about 30 -45 minutes for these muffins to be ready. They are also very nutritious and healthy. Perhaps that is why their popularity grows by the minute.
